Keto waffles – savoury edition with Kajmak or Staka
Keto waffles can be prepared in various ways and most of the recipes always lean to the sweet side. However, in the south-east of Europe, we don’t combine savoury and sweet taste that often. This is why I wanted to present this delicious version of savoury Keto waffles! We used the organic ingredients that will pack you with top nutrients and provide great satiety. Especially, if you are travelling, these waffles can serve as sandwiches for long road trips or picnics.
Keto waffles with Kajmak or Staka
What in the world is Kajmak?! I know, the word itself sounds funny, you are supposed to pronounce it kai-muck. However, the taste and nutritional values are extremely delightful! This is a traditional Balkan cream spread made of sheep, goat or cow’s milk. Naturally, it was introduced to me by my wife. It’s something between salted butter (the content of fat is sometimes up to 60%) and extremely mild cream cheese. However, it’s unique and incomparable to anything we have in Greece. Well, in fact, I found a product from Crete (where else) that resembles Kaymak quite a lot. It’s a kind of goat milk butter-cream and comes under the name Staka. But let’s see first, what is Kajmak.
Balkan Kajmak
As the Wikipedia says, “Kaymak is a creamy dairy product similar to clotted cream, made from the milk of water buffalos, cows, sheep, or goats in Central Asia, some Balkan countries, Turkic regions, Iran and Iraq.”
More than just a cream spread
Interestingly, in the Balkan countries, Kajmak is more than just a kind of food! It’s a gift from the ancient Gods! The creaminess and fat content make it so Keto-friendly that you just want to feast on it. You can use it as a savoury fat-bomb! Kajmak is difficult to obtain in the western world, so I recommend trying out this AWESOME recipe written by a person who grew up in Croatia and now resides in the USA. In fact, I love this blog and highly recommend it, just be careful – it’s not 100% Keto. Still, you can always work your Keto way around!
Greek Staka
Staka is a traditional spread from the island of Crete. I can describe it as something between cheese and yoghurt – or rather a distinctive dairy product. Freshly drawn milk cream (usually of goat milk) is collected and then lightly salted. At this point, it is being warmed over a low heat for several hours. Then, all the nice goat milk’s fat is “swimming” at the top. After that, fat is skimmed off and kept separate: this is the famous Stakovoutouro, (Staka-butter) and can be treated just like ordinary goat butter.

Keto waffles - savoury edition
Ingredients
- 2 large eggs free-range, organic
- 4 tbsp sour cream grass-fed, organic
- 1 tbsp psyllium powder organic
- 1 tbsp chia seeds organic, black
- 1/2 tsp sea salt
- 2 pinch nutmeg
- 4 tbsp almond flour (a good alternative is full-fat sunflower seed flour)
Topping
- 1 tbsp Kajmak (you can use salted butter, full-fat cream cheese or just make your own Kajmak)
Instructions
- Beat the eggs with sea salt, nutmeg, and sour cream.
- Add psyllium, chia and sunflower seed flour. mix well to get a smooth consistency.
- Preheat the waffle iron and grease it with some butter or coconut oil. Bake the waffles for 5-7 minutes.
- Cut the waffles diagonally so that you get 8 triangles (4 sandwiches). Let them cool down a bit. Fill the waffles with Kajmak and enjoy.
