Keto Kavala Cookies

  • 2,5 cups almonds blanched
  • 2 cups almond flour
  • 250 g (2 sticks) softened butter grass-fed
  • 2 medium eggs
  • 2 tbsp stevia-erythritol sweetener blend
  • 1/2 tsp sea salt
  • 2/3 tsp baking soda
  • 3 tbsp lemon juice


  • 3 tbsp powdered stevia-erythritol sweetener


  • Roughly grind the almonds in a food processor. Then, place them in a large skillet and roast for 3 minutes on 120ºC (248ºF) Add almond flour and roast until it becomes light brown. 
  • Remove the almonds and almond flour from the oven and transfer into a mixing bowl. Let it cool down. 
  • Add stevia-erythritol blend, salt and baking soda. Combine well.
  • Add softened butter, lemon juice and eggs. Work with your hands until it forms a dough
  • Place the dough in between 2 parchment papers and roll it into 0,5 cm thickness
  • Cut out the cookies with moon shaped cookie cutters and place on a baking sheet lined with parchment paper
  • Bake at 180 C degrees for 18 minutes
  • When the cookies cool down, sprinkle them with powdered stevia-erythritol blend sweetener. Enjoy them after a good Keto meal.
