Electro Lemon Custard plus an announcement for the first Keto conference in Greece

Hey Ketonians, low-carbers or just people who want to cook smart and healthy for their loved ones! Especially those who cook for kids. I have a great new recipe for you. But before we continue with the recipe, let me share some interesting news with you.

Jan. K. Górczyński . the founder of Be Keto

We are so excited that Be Keto has joined us as an official sponsor of our From Gut to Brain mini Keto conference in Athens on the 26th of August! This special event is the heart of our Keto Mediterranean Retreat, taking place from the 22nd until the 29th of August 2026 in a stunning stone castle villa overlooking ancient Marathon.

We will have the wonderful opportunity to meet and greet the founder of this Polish British company, Jan K. Gorczynski. As the “Keto Police”, we promote only the super clean products that contain no harmful additives. Be Keto KetoLytes are exactly that type of product. They contain only stevia extract as a sweetener and some natural flavourings. No sugar, no glucose and no questionable fillers. These electrolytes come packed with premium minerals including sodium, potassium, magnesium, calcium, zinc and phosphorus. Many variants also include natural astaxanthin from the Atacama Desert for skin health and antioxidant power, plus vitamin C. They help fight keto flu, support optimal hydration and keep you in deep ketosis while tasting delicious. The lemon flavour works perfectly in recipes too!

Where is the recipe for Electro Lemon Custard?

Ok, here it goes… It’s difficult to cheat when you have so many healthy options over here in Greece, I said to my Portuguese-American friend on X. For example, what could easily be considered a cheat turned out to be this silky, tangy, ultra-creamy Lemon Custard Cream. I made it with pasture-raised egg yolks, rich sheep butter, zesty fresh lemons, smooth goat cream cheese, and sweetened with Be Keto KetoLytes. The lemon flavour is a match made in keto heaven!

Now, why did I call it Electro Lemon Custard? Because of Electrolites, not only because of the colour. 😉 Everyone is worried about electricity and energy these days, and when I just look at the rising sun, all I can think about is the energy it gives to us on Earth. This energy is somehow always concentrated in egg yolks. I wonder why yellow is not the official energy colour!? The rich yellow comes from my locally sourced eggs, and beautiful organic lemon zest… I cannot help it, I have to share more photos with you:

Why not use raw honey?

We were attending the Greek Easter party, where there were some children, so I thought, perhaps honey would be a better choice. I swapped in local chestnut honey that a beekeeper friend generously brought us. Only one spoonful of this version, and I couldn’t believe it! It delivered a pure orgasmic feeling for any foodie. Bright citrus, velvety A2 casein dairy richness and that perfect sweet” to “tang balance that makes your eyes close in bliss. Even the keto version sweetened with KetoLytes hits every note without a single gram of guilt.

And now, the intro is ending, so the recipe for the Electro Lemon Custard is here…

Ingredients

  • 6 large 6 egg yolks (pasture raised and organic preferably)

  • 100 g 100 Sheep butter (or any organic dairy butter you have)

  • 3 tbsp 3 zest of organic lemons

  • 120 ml 120 juice of organic lemon

  • 300 g 300 Ricotta or Goat Cream Cheese

  • 1 tsp 1 KetoLytes with flavour of lemon (alternatively use pure monk fruit powder or 2 tablespoons of honey)

Directions

  • In a ceramic bowl, place egg yolks with the lemon-flavoured KetoLytes powder (or monk fruit powder). Stir using a wooden spoon till you unify everything and the mixture gets smooth.
  • Melt the butter and remove it from the heat. Add lemon zest to it so that the zest releases the aromatic oils in the hot butter.
  • Using a whisk, energetically whisk the egg yolks while pouring lemon juice into them. And as soon as it’s unified, start pouring hot butter as if you were making Hollandaise sauce. Keep whisking to make sure that your consistency stays silky smooth.
  • Pour the mixture into the saucepan where you melted your butter and return it to the stove at a very low temperature. Now use your wooden spoon again and keep stirring very energetically, as if all the electrolytes of this world are in your arm. 😀
  • When you get a thick custard, remove it from the heat and pour it into a mixing bowl.
  • Add ricotta or goat cream cheese to the mixing bowl and use your biceps and triceps to whisk it together as if there’s no tomorrow. If you feel weak that day, it’s OK, you can use a mixer. (if you will be using honey, wait for the custard to cool down and then mix in 2 tablespoons of honey)
  • Prepare 6 serving glass bowls and pour an equal amount of the custard into them: Decorate with slices of lemon. Keep in the refrigerator until serving.

Notes

  • Even if you will be using honey as a sweetener (making it notnKeto, but a healthy children’s dessert), you can still add some electrolytes, the flavour will be magically great. Make sure your custard is cooled down so that your raw honey keeps all the vitamins and micronutrients.

What to say, all good things

This dessert proves the point. On a well-planned keto or low-carb Mediterranean lifestyle, indulgence is the rule, not the exception. The healthy fats from sheep butter and goat cheese, the micronutrients from fresh lemons, and electrolytes create something truly exceptional. Creamy, bright and deeply satisfying.

Together with Be Keto as our official sponsor, this retreat and conference promise to be unforgettable. Science-backed, food-focused, and deeply healing for both gut and brain.

Stay tuned for more recipes, retreat updates and ways to join us. In the meantime, whip up this Lemon Custard Cream, scoop some KetoLytes into your water and remember… On keto, the cheats are often the healthiest and most delicious choices of all!

See you in Athens this August!
