Keto pudding – A medicine and a dessert

Did you know that keto pudding can serve both as a remedy and a healthy dessert? Not long ago I wrote an article about health benefits of goat milk. Many of you have heard that goat milk has medicinal properties and if taken daily it can reduce symptoms of various conditions. However, if you are not used to taking goat milk products you might find it unusual in taste. Furthermore, my recipe for collagen jelly candies also took a lot of your attention. Then, I got a question from several readers if I can create another recipe that will serve as a remedy for inflammation-related conditions. Immediately I thought of keto pudding. Two things came to mind:

  1. Goat milk and goat butter
  2. Grass-fed beef gelatin

A homemade remedy in a form of a dessert

Grass-fed beef gelatin is extremely beneficial anti-ageing substance, it helps in preserving our skin, bone structure, joints, muscle maintenance, etc… Additionally, beef gelatin provides proline and glycine which are balancing the inflammation process in our body. It serves as an excellent thickening agent for keto pudding. On the other hand, almost magical properties of goat milk will make this recipe both medicinal and enjoyable. We will mask the infamous smell of goat milk and butter with cacao and cinnamon. Also, this recipe calls for very low heat preparation which will preserve all the vitamins and minerals and other micronutrients. By consuming daily a portion of this pudding you will help the following conditions:

Chocolate keto pudding (with gelatin and goat milk)

Preparation time: 10 minutes (cooling time 60 minutes) 

Servings: 2 portion

Ingredients

  • 150 ml unpasteurised goat milk
  • 20 g goat butter
  • 20 g granulated grass-fed beef gelatin
  • 1 tsp ground cinnamon
  • 2 tbsp stevia
  • 1 tbsp organic raw cacao
  • 100 ml mineral water

Preparation

  1. Place the goat milk, butter, stevia, cacao and cinnamon in a deep pot
  2. Heat it on a very low temperature and stir with a whisk. Be careful not to bring it to a boiling point
  3. Combine the grass-fed beef gelatin with mineral water in a glass and add it to the pot
  4. Remove from heat and stir energetically until all the gelatin dissolves
  5. Pour the pudding in a glass of your choice and place it in the refrigerator
  6. Serve when it’s fully set

You can decorate the pudding with some mascarpone cheese, nuts, berries, or lemon zest. Make sure you consume it immediately after your main meal because, as always, on keto, we do not snack in between meals.
