Keto summer appetisers with basil and fish roe

Keto summer recipes anyone? how about not turning on the stove or your oven at all? Wonderful, right?! Well, if you are preparing a nice meal with seafood, you might as well prepare a nice starter or appetiser to impress your guests or family. In fact, this particular recipe will give you an extra boost in precious nutrients that can be found in seafood!

Why we should eat more fish roe?

This Keto summer adventure wouldn’t be so exciting if it didn’t offer only the top nutrients from the kingdom of mighty Poseidon.

A single serving of fish roe provides you with 133% of your daily need for precious vitamin B12. As we already know, this vitamin is vital for many bodily functions including heart health. Quick and easy summer Keto appetiser with fish roe and basil

Ingredients

  • 1 medium avocado

  • 30g (1 oz) fresh basil

  • 1/2 tsp white pepper (you can use black too)

  • 30 (1 oz) g goat or sheep feta cheese

  • 2 tbsp lime or lemon juice

  • 4 tablespoons fish roe (preferably carp roe)

  • 1 tbsp lime or lemon zest

Directions

  • Peel the avocado, remove the seed and place it in a food processor. Add fresh basil, olive oil, feta cheese, white or black pepper, lime or lemon juice and zest.
  • Pulse until you get a smooth paste.
  • Distribute the paste in 4 long glasses (you can use wine or champagne glasses)
  • Place 1 tablespoon of fish roe on top of every appetiser
  • Decorate with fresh basil leaves and refrigerate for at least 1 hour before serving
