Meat & mushroom pie anyone? Mixing two excellent things can result in two ways. A total perfection or a total disaster. Indeed ever since the dawn of civilisation, people liked to perform experiments and create all sorts of hybrids. In most cases, they were blessed with a great new discovery! Even if they failed, they would not stop until they were satisfied with their alchemic experiments. The same goes for Ketonians! We just love to mix things up and come up with new exciting versions. Please don’t cry about unusual ingredients

Receiving and answering questions about specific ingredients became our daily routine. Of course, we know that it’s not easy to find all the Keto Mediterranean ingredients around the globe. Try to understand, Mediterranean food tastes and feels so good because these healthy ingredients are widely available here. If they are not easy to find in your location, there’s always a substitute. Don’t hesitate to ask us and we’ll give you the next best thing to substitute any of the ingredients we are using for our Ketonisations. The etymology of Kreas (meat) and Manitari (mushroom)

The word kreas (κρέᾰς) in Greek means meat and this is where creatine draws its name from. On the other side, manitari (μανιτάρι) means mushroom in modern Greek, while in the ancient times it was called μύκης (mukēs). The word mycology comes from the Greek: μύκης (mukēs), which would be “fungus” and the suffix λογία (-logia), naturally meaning “science”.

Ingredients
  

Crust

  • 4 large eggs Free-range (we used 12 quail eggs)
  • 100 g (1/2 cup) butter We used goat and sheep butter mixture
  • 4 tbsp olive oil Extra virgin, We used the Greek variety from Peloponnesus
  • 6 tbsp sunflower seed flour You can use almond flour
  • 4 tbsp coconut flour Organic
  • 1/2 tsp sea salt We used flower of sea salt
  • 1 tsp dried rosemary

Filling

  • 4 tbsp olive oil Extra virgin
  • 7 cloves garlic Organic
  • 4 tbsp smoked bacon Finely chopped into small cubes
  • 4 tbsp prosciutto Finely chopped into small cubes
  • 700 g (3 cups) ground mixed meat We used beef and pork mixture
  • 1 tbsp red paprika powder We used Hungarian mild variety
  • 1 tbsp oregano Dried
  • 4 whole bay leaves We used fresh, you can use dried
  • 1 tbsp psyllium powder Organic (You can add an egg instead)
  • 200 g (1 cup) sour cream Organic
  • 1/2 tsp sea salt
  • 1/2 tsp cinnamon powder We used Ceylon cinnamon
  • 1/2 tsp black pepper Freshly ground
  • 1 tsp parsley leaves Dried

Mushroom topping

  • 1 cup sliced mushrooms
  • 1 tbsp butter We used goat butter
  • 1 tsp basil dried
  • 1/2 tsp red paprika flakes dried
  • 1/2 tsp peppermint dried

Instructions
 

  • First, prepare the crust. Mix eggs with melted butter and olive oil. Add all the spices and start adding sunflower flour and coconut flour spoon by spoon. work the dough with your hands. Grease 30 cm (11 inches) pie pan with some olive oil and place the dough in it. Tap with your palms to spread. Then use your fingers to spread the dough around the edges. Stub a few times with a fork.
  • Bake the crust in the oven for 10 minutes at 170ºC (350ºF). Then take it out of the oven and set it aside.
  • For the filling, saute finely chopped garlic, bacon and prosciutto on olive oil in a deep saucepan. Add minced meat and stir well. Add all the spices and if needed add some water to unify the mixture. Cook for 10 minutes. Set it aside.
  • Mix sour cream with psyllium and add it to the meat mixture. Fill the previously prebaked crust. 
  • Saute mushrooms in butter with spices for 5 minutes and then place them on top of your Keto Kreatomanitaropita. Bake the pie in the oven at 170ºC (350ºF) for at least 25 minutes.
  • Serve it warm. If you have leftovers, keep them in the refrigerator. The pie can be reheated in the oven. Enjoy!
