Silky Keto cake for Lactose Intolerant Ketonians

Silky Keto Cake is everything you’ve ever dreamed of for celebrations when you want to skip the carbs. Even if you’re not usually a cake person, this one will win you over. Whether it’s a birthday, holiday, or any special occasion, you’ll feel completely safe serving (and eating) it. I developed this updated version specifically for friends who are lactose intolerant or want a fully dairy-free keto treat, while making it accessible to everyone.

Lactose Intolerance? No Problem

Lactose intolerance affects a huge portion of the population, around 75% worldwide. Switching to coconut oil eliminates dairy, so there’s zero lactose or digestive discomfort. Coconut oil is keto-friendly, stable at room temperature, and delivers a beautiful texture. To achieve that extra-silky, luxurious mouthfeel in the icing, we add a touch of extra virgin olive oil. The result is smooth, creamy, and utterly irresistible, without a single gram of butter or goat dairy.

What If You’re Not Intolerant?

If your family tolerates dairy, feel free to experiment later, use butter and mascarpone. However, this version is intentionally 100% dairy-free, so everyone can enjoy it. The coconut-olive oil blend keeps the cake moist and the icing silky while staying strictly keto.

Sweetener Tips for Perfect Texture

Keto sweeteners can sometimes crystallise when chilled if they contain erythritol or any other sugar alcohols. To avoid any crunch:

  • Use 100% pure stevia or monk fruit extract (powdered if possible).

Liquid sweeteners won’t prevent this issue if they contain erythritol. Precision is key: convert tablespoons to the tiny micro-scoops that measure 10 mg of pure powder.

A Few Secrets for the Silky Keto Cake

The icing becomes thick and pipeable thanks to patient, long mixing, ideal for beautiful decorations with a piping bag or kit. I decorated mine with almond flakes and organic raw cacao nibs for crunch and elegance. Coconut oil has its own mild flavour, so I kept the original vanilla, rum, cinnamon, and nutmeg blend. They pair perfectly with the raw cacao. The optional edible essential oil (banana, citrus, or whatever you love) adds a lovely aroma without any carbs. The cake stays moist for days in the fridge thanks to the coconut oil and psyllium.

Ready to make this silky masterpiece? Bring your mixer and a little patience, you’ll be rewarded with a show-stopping keto cake!

Ingredients

  • 8 large 8 eggs

  • 1 tbsp 1 pure monk fruit powder

  • 1 tsp 1 sea salt

  • 1/2 tsp 1/2 citric acid (make sure it’s lemnon extracted)

  • 6 tbsp 6 melted coconut oil

  • 1/2 tsp 1/2 baking soda

  • 4 tbsp 4 organic raw cacao powder (Not Dutch-processed cocoa)

  • 1 tbsp 1 psyllium powder

  • 300 ml 300 warm water

  • 1 tbsp 1 vanilla extract

  • 1 tbsp 1 naturalrum flavouring

  • 8 tbsp 8 Nut flour of your choice (I use haselnut flour)

  • 3 tbsp 3 Coconut flour

  • Icing
  • 6 large 6 organic hen eggs

  • 1/2 tsp 1/2 sea salt

  • 3 tbsp 3 lemon juice

  • 200 ml 200 melted coconut oil

  • 4 tbsp 4 Light EVO (a type of olive oil that has light flavour and aroma)

  • 12 drops 12 Esential oil of your choice (edible, such as banana peel oil)

  • 1 tbsp 1 vanilla extract

  • 4 tbsp 4 organic raw cacao powder

Directions

  • In a large bowl, beat the 8 whole eggs with the sea salt, citric acid, and sweetener using an electric mixer on medium speed until pale and fluffy.
  • Slowly drizzle in the 6 tbsp melted coconut oil while continuing to mix.
  • In a separate small bowl, combine the psyllium powder and baking soda with the 300 ml of warm water. Stir and let it sit for 5 minutes to thicken. Add this psyllium mixture to the egg batter slowly while mixing on low speed
  • Add both cacao powders, then the vanilla extract, rum flavouring, Ceylon cinnamon, and nutmeg.
Increase the speed slightly and add the almond flour one spoonful at a time until fully incorporated. If the batter still feels too loose, stir in the optional 2 tsp coconut flour.
  • Grease a bundt pan (or your favourite cake mould) thoroughly with coconut oil and dust the bottom and sides with coconut flour to prevent sticking.
Pour in the batter. Bake at 160°C (320°F) for 45 minutes. Turn the oven off and leave the cake inside for another 15 minutes.
  • Remove from the oven and let the cake cool completely in the mould (about 2 hours). Once cool, gently flip it out onto a plate and slice it horizontally into two layers.
  • Icing preparation
  • In a bowl, beat the 6 whole eggs with the powdered sweetener, sea salt, and citric acid on high speed until smooth.
  • Very slowly drizzle in the melted coconut oil, beating continuously at high speed as if you were making mayonnaise.
Add the raw cacao powder and continue beating until uniform.
  • While beating, gradually add the 3 tbsp extra virgin olive oil; this creates the silky, luxurious texture. Once thick and pipeable, place the icing in the refrigerator for 20–30 minutes to firm up slightly.
  • Assembly
  • Place the bottom cake layer on your serving plate. Spread a generous amount of icing over it.
Place the top layer on and press gently.
  • Cover the entire cake with the remaining icing using a wide knife or offset spatula. For a super-smooth finish, dip the knife in hot water between strokes.
  • Decorate with any leftover icing using a piping bag. Top with almond flakes and organic raw cacao nibs (or any keto-friendly toppings you love).

Notes

  • Keep the finished cake in the refrigerator. Before serving, let it sit at room temperature for 15–20 minutes so the icing softens to its silky best. It tastes even better the next day!
