Birthday Keto cake comes as a symbol a long tradition. We grew up with a special cake for our birthdays and if ever, we deserve our own birthday cake even while we are on Keto! Now, we’ve covered the subject of healthy Keto dessert so many times, especially in our recent article about 7 common mistakes Ketonians make when they decide to prepare Keto dessert! It’s difficult to compete with sugary and carby cakes nowadays. However, it should not be difficult! What gives the flavour and creamy texture to just about any cake is the butter.

Don’t blame the butter for what the bread did to you!

Remember this wonderful saying? People blamed butter for decades for all the health issues and weight gain, while, in fact, they should point the finger at sugar and wheat flour! Therefore, just about any cake can become a Keto cake if you exclude sugar and starch! But, even Keto cake has to be delicious and attractive. In fact, visual presentation plays a major role when we are preparing festivity treats!

Unforgettable birthday cake of my childhood

I remember, as a very small girl, I fell in love with a special birthday cake prepared by my late mother who actually died of cancer when I was just 5 years old. I am not going to make this post into a sentimental breakdown, but I cannot help remembering this unbelievably tasty and creamy cake! They say it’s difficult to remember things from early childhood, but the taste of that cake is imprinted in my memory as if some alien technology placed it there. Maybe it’s my new Keto brain ability, or my new youth now that I’m celebrating my birthday fully Ketonised for over a year!

Remembering the taste

I must admit, the emotion and memory of that cake inspired me to Ketonise it. Not only did I ketonise the Birthday Keto cake, but also made it into an idea for a gift to all Ketonians who believe they deserve nutritious and healthy birthday Keto cake! This specific cake of my childhood was made with walnuts, chocolate and cream cheese… I am sure of it even though I was too small to receive the info about the recipe! How do I know it? Once I ketonise it, Keto birthday cake tasted so close to the memory of my childhood cake that I am positive this is it!

The miracle of Alpha-linolenic acid

Regular consumption of walnuts significantly reduces the risk of heart disease. Walnuts contain large amounts of alpha-linolenic acid. This is a type of omega 3 fatty acid that is only found in plants and plays an important role in maintaining heart health. Alpha-linolenic acid protects against inflammation of the blood vessels. It reduces the risk of heart attack and normalizes blood pressure.

Walnut is a small brain

Isn’t it? When you look at it, the walnut core reminds you of a small brain. As if mother nature is giving us a message. Walnuts enhance cognitive abilities and normal development of bodily functions. According to a study published in the American Journal of Clinical Nutrition, eating walnuts reduces LDL cholesterol and increases the level of good cholesterol.

Walnuts as cancer prevention

These mysterious nuts contain large amounts of antioxidants and anti-inflammatory substances. Therefore, no wonder they have a significant effect on cancer prevention. The research conducted at Marshall University School of Medicine in West Virginiaconfirms that phytosterols and antioxidants in walnuts can prevent breast cancer. They are also beneficial in the prevention of prostate cancer!

Can it help diabetes?

Monounsaturated and polyunsaturated fat found in walnuts help to maintain a normal level of insulin. The research at Harvard Public Health School found that women who consumed 30 grams of walnuts five times a week had a 30% lower risk of developing Type 2 diabetes.

Ingredients
  

Cake

  • 8 large eggs free-range
  • 120 g (1 cup) butter grass-fed
  • 1/2 tsp sea salt
  • 2 tbsp lemon juice
  • 2 tbsp stevia blend sweetener or 2 micro scoops 100% stevia extract
  • 200 g (1 cup) sour cream
  • 1 tsp baking soda
  • 3 tbsp almond flour
  • 3 tbsp coconut flour
  • 6 tbsp ground walnuts organic
  • 1 tsp Ceylon cinnamon
  • 1 tbsp organic vanilla extract

Filling and icing

  • 500 g (2,5 cup) mascarpone
  • 6 tbsp sparkling mineral water
  • 4 tbsp stevia blend sweetener or 4 micro scoops 100% stevia extract
  • 4 tbsp ground walnuts
  • 1 tsp natural walnut flavouring optional
  • 2 tbsp organic raw cacao powder
  • 1 dash sea salt

Decoration

  • 4 tbsp mascarpone
  • 1 tsp vanilla extract
  • 3 homemade Keto chocolate fat-bombs of your choice

Instructions
 

  • In a deep mixing bowl, beat eggs with melted butter, salt, stevia, vanilla extract and lemon juice for 5 minutes. Add sour cream and keep beating.
  • Mix all the dry ingredients and add them spoon by spoon to the wet ingredients to create a thick batter.
  • Line an 8x11" (20x30 cm) baking pan with parchment paper, grease it with some butter or coconut oil and pour in the batter. Bake at 170ºC for 25 minutes. Let the cake cool down and cut it in half. 
  • For the filling, beat the mascarpone with sparkling mineral water until you get a whipping cream consistency. Add stevia, sea salt, organic cacao powder and finely ground walnuts. Natural walnut aroma is optional, but you can also use 1 tsp of walnut liqueur. 
  • Place one part of cake on a long plate, cover it with the filling, then place the other part of cake on top. Cover the whole cake with the rest of your filling/icing.
  •  For the decoration, mix mascarpone with vanilla extract and use Decorate the Icing tool of your choice. Top with homemade chocolate fat bombs which you can also grate on top to create chocolate shavings, like in the photo.
