Now, how do we ensure we have more omega-3 in our nutrition? As you know, we are not entirely friendly to the pharmaceutical approach of supplementing everything. This is something I simply love doing. When someone tells us they don’t like fish, I always suspect they haven’t tried it prepared the right way. Now, I know not everybody has the access to fresh and wild-caught fish, as we do iN Greece and Croatia. However, we still believe this ancestral good should not be excluded from the modern diet! I know they will scare you with the mercury and antibiotics from the farmed fish! Well, this can be a problem. But remember, frozen fish usually comes directly from the fishing boats. This is the best way to continue having fish and its health benefits in any part of the globe.

Well, suspicious types of fish flesh can be the main ingredient. They then add wheat or corn flour to get the volume and texture. Then, the in who knows what oil. Even if you use olive oil, frying starch can be quite toxic. Now, if we talk about industrially prepared ready products, you know those that you just nuke and eat, those are not even food! Just look at the label. The list of stabilisers, additives, corn starch, modified or not… You simply should not ever grab such a product. Regardless of how little time you have to cook! Now, I understand that time is precious, but if you spend it to make these tastiest fish burgers, you will be “hitting two fish (this time not the birds) with one stone”! You will make sure you and your family had something healthy yet extremely tasty!

Ingredients

  • 400 g 14 oz mackerel filet (or another type of bluefish)

  • 2 medium 2 medium eggs (boiled)

  • 2 medium 2 medium eggs (raw)

  • 150 g 5 2/7 oz grated or chopped zucchini

  • 4 cloves 4 cloves garlic

  • 40 g 1 2/5 oz melted butter

  • 2 tbsp 2 tbsp fresh dill

  • 1/2 tsp 1/2 tsp black pepper

  • 50 ml 1 2/3 fl oz lemon juice

  • 50 g 1 3/4 oz crumbled feta cheese

Directions

  • If you use frozen fish, make sure it’s properly defrosted before starting. Place all the ingredients in a food processor and process till you get a smooth paste. (If you are preparing the ingredients manually, finely chop everything. In the end, add raw eggs, melted butter and lemon juice. Mix with your hands.
  • Cover the mixture with plastic foil and leave it in the refrigerator for at least 30 minutes.
  • Preheat the oven to 180ºC (350ºF). Divide the mixture into 4 parts and shape 4 medium burgers. We believe 2 burgers are a decent portion for an adult. Place them on a baking sheet lined with parchment paper. Bake for 25 minutes.
  • Serve the burgers warm with your favourite Keto-friendly dip or with a small green salad seasoned with olive oil, sea salt, herbs and lemon juice.

Notes

  • After the mixture cools down in the refrigerator you will be able to create burgers or small balls because the butter and eggs will thicken the consistency.
  • For larger amount of portions, increase the number in the servings section.
