Keto dark chocolate desserts are adored by so many Ketonians around the globe. Yes, we like to experiment with the bitter-sweet combinations while knowing that the benefits and nutrients from dark cacao will give a healthy note to our Keto creations.
However, finding Keto dark chocolate can be tricky. Especially if you rely on industrial versions. We spent a couple of years in search of commercial chocolate that can be called 100% clean. This is why we always keep saying that it’s healthier to make your own chocolate at home. We even created the version which is ready in 5 minutes!
The search for clean Keto dark chocolate
The darker it is, the better for you. The fewer ingredients it has, better for you! But how to find such a product? In today’s world, the food industry just loves adding stabilisers, emulsifiers and other additives which always influence your health if you use them on a daily basis. This is why you can’t trust the majority of industrial producers. Not even if they claim to be Keto or Low-Carb oriented.
But, as with everything, there are sparkling examples of good products, it’s just that they are so rare and difficult to find… Your main goal is to find a product that doesn’t contain any sweetener (you will add your own if you want by melting it and sweetening it with clean sweetener). More importantly, you don’t want any soy or sunflower lecithin. When it comes to aroma, it can contain some of the natural spices, but that should be it!
Keto dark chocolate golden rule
The golden rule of healthy Keto dark chocolate doesn’t pay attention to the added sweetener and naturally occurring sugars. If it’s 100% cacao paste, there will be no additives and sweeteners.
The golden rule of clean Keto dark chocolate cares about the process. How is the product processed and what was the original ingredient? The only clean Keto dark chocolate product consists of 100% organic cacao paste. Not even a single additive or sweetener. Yes, no stevia or erythritol either!
Now, I don’t say cocoa because cocoa is processed. Or better say – overprocessed, by thermally and physically extracting the cacao butter out of the beans. Cacao mass is just pure cacao beans ground into a paste. That’s the cleanest chocolate you can find on this planet. Everything else is chemistry or playing with physics. The industry loves to add as many ingredients as possible to make the product cheaper and tastier!
What the food industry doesn’t want you to know about dark chocolate?
The balance of the percentage listed usually is sugar but some companies pull back the percentage of cacao paste and add vegetable oils (usually the unhealthy ones). Then they like to add thickening agents such as soy lecithin to end up with similar consistency. But that’s exactly what we don’t want on clean Keto!!!
So, how do Ketonians act here?
Simply, if you cannot find a 100% cacao paste chocolate, then make your own! We have several recipes, but this one, in particular, is tasty and the texture is so soft and creamy. Furthermore, if you love desserts with dark chocolate, you can always work your way around with some cacao butter and organic dark cacao.
Raw cacao is always healthier, but if you want a darker colour, you will use organic dark cacao and enjoy this Keto dessert without even a drop of guilt. Take a look at the nutrition fact label, it’s just perfect for any Ketonian.
Let’s just get our fingers and lips dirty
This dessert is an ideal answer to all your chocolate cravings. It has a slightly crunchy yet creamy texture, while the aroma of caramelised butter and sweetener reminds of most famous triangle-shaped Swiss chocolate bar called Toblerone. But, since the original Toblerone contains loads of sugar and soy, our version is ten times healthier! Give it a go, you will not be disappointed and your family will want it for Christmas or some other celebrations!

100g (3,5 oz) butter (I use goat burtter)
1 tbsp coconut oil
2 tbsp vanilla extract
5 tbsp organic dark cacao powder
1/2 tsp sea salt
500g (17,6 oz) goat/sheep cream cheese (or Mascarpone)
6 tbsp ground hazelnuts (or blanched almonds or macadamia)
2 tbsp coconutn flour
1 tsp Ceylon cinnamon
6 tbsp stevia-erythritol or monk fruit-erythritol granulated blend sweetener
2 tbsp chopped 100% dark chocolate (skip this if you can’t find it)
2 tbsp raw or dark cacao powder
- Place the butter, coconut oil, vanilla, salt and sweetener in a saucepan. Heat it over medium temperature so that everything melts and unifies. Keep stirring with a wooden spoon and allow the butter and seweetener to caramelise a bit.
- Add cream goat cheese (or Mascarpone), cinnamon and dark cacao powder. Keep stiring until it’s nicely smooth and dark. Remove from stove.
- Add ground nuts of your choice and coconut flour. Mix well and let it cool down a bit. Now add chopped chocolate bits. Mix again.
- Line a long platter with some parchment paper and place the mixture on it. Using your hands, create a long triangle-shaped dessert like in the photo.
- Place 2 tbsp of cacao powder in a metallic strainer and by gently tapping it sprinke cacao pšowder all over your triangle-shaped dessert.
- Leave it in the refrigerator for at least 4 hours before serving. You can cut 20 portions (triangle slices) from this ammount or dessert.
