Keto Ice Pops – Nutrient packed summer dessert

Keto Ice Pops or as the contemporary world calls them Popsicles, are the ultimate temptation when summer months arrive. This has nothing to do with the age! In general, people of all ages relate this unique summer treat to careless times, relaxation, vacations or even lazy afternoons. It’s almost a matter of modern mythology. Last night, right after the cinema, we went for a walk. I believe we saw hundreds of people, children and grownups, eating some sort of Ice Pops.

Let’s admit it, it’s refreshing, convenient and usually tastes so good. But when you take those industrial Ice Pops, even the basic ones that are supposed to be made with fruit juice and water, you’ll find a whole army of additives, stabilisers and at least 3 types of sweetener. Artificial colour should be the least of your problem. Things even get “uglier” when milk and cream ice cream version are sold as Ice Pops by big food industries. As Ketonians, we know what we can do! Make our own clean version, at home!

How to Ketonise Ice Pops 

I believe you already have your own recipe for Keto Ice Pops. Maybe you even tried to ketonise your old recipe. If you are new to Keto and this is your first summer, this article could be of real refreshment. However, have in mind, just because something is Keto, it doesn’t mean you’ll eat it at any time of the day and in any amount. If it’s Keto it has a lot of fat, that’s natural. Furthermore, if it’s really Keto, it also has nutrient density and it’s supposed to satisfy your cravings.

As with eany dessert, the only time you should enjoy a Keto Ice Pop is immediately after your Keto meal! 

Keto ice pops with great nutrients

Before we cover this subject, let us remind you of our two popular recipes for chocolate ice cream (the fastest possible version) and also our favourite lemon ice-cream. They both are based on Mascarpone. It’s an excellent ingredient for summer desserts, can be utilised on so many different ways but… It’s still cow’s dairy, and we recommend reducing the cow’s dairy products to a minimum! So, this version will give you a few alternatives. If you would like to go totally dairy free, then you’ll be able to work your way around homemade coconut cream. On the other side, if you are lucky to have goat cream or goat butter available, your Keto Ice Pops will be not only healthier, they’ll be even more delicious. Are you ready to Keto Pop?

To make a perfectly nutritious Keto Ice Pop, we will stay away from cow’s dairy but will use the emulsifying and nutritious power of egg yolks to make our Keto frozen treat soft and creamy. Furthermore, as a result of a pure accident, we discovered that frozen chocolate layer which is usually used for creamy pops can be made with cacao and coconut oil. A dash of sea salt and sweetener and just 20 minutes freezing. Trust us, this works perfectly! So, before we move to the recipe, let’s open the ice cream and frozen dessert season at Greek Goes Keto with a list of important things every Ketonian can find handy when it comes to homemade frozen dessert preparation:

  1. Right after the lunch would be the ideal time to have any dessert, same goes for frozen ones in summer
  2. If you want your dessert to keep the creamy consistency, try adding sea salt and a sweetener with Erythritol
  3. Ideal popsticle moulds are  made of stainless steal. However, if you can’t find them easily, make sure your plastic moulds are BPA free
  4. Don’t be tempted to buy industrial sugar-free popsticles, they always contain dirty additives! Making your own at home can be really fun!
  5. For the chocolate coating, don’t use any sugar alcohol as a sweetener, you need it to be crispy and pop when you bite into it and sugar alcohols don’t freeze well. 100% Stevia extract is ideal here.

Ingredients
  

  • 6 large egg yolks
  • 4 tbsp stevia-erythritol blend sweetener or Monk fruit blend
  • 1/2 tsp sea salt
  • 2 tablespoon vanilla extract (you can add rum extract, mastic extract or cinnamon)
  • 2 tbsp coconut oil or goat butter
  • 200 ml (1 cup) coconut cream or goat milk cream

Chocolate coating

  • 10 tbsp melted coconut oil
  • 2 tbsp dark organic cacao powder
  • 2 tbsp crushed nuts or coconut shavings
  • 20 mg 100% stevia extract (20 mg is 2 micro-scoops)

Instructions
 

  • Beat the egg yolks with the sweetener, sea salt and vanilla extract for at least 5 minutes. 
  • Place the cream (coconut or goat) in a deep saucepan. Add goat butter or coconut oil and heat it up to the boiling point. Start pouring this mixture into the egg yolks while still mixing. 
  • Pour the mixture into 6 popsicle moulds, cover with a lid and place a stick in. Freeze them for at least 2 hours.
  • Take a wide metallic or plastic plater and place some baking paper on it. sprinkle some crushed nuts or coconut shavings on it. 
  • Melt the coconut oil and mix it with stevia extract and cacao powder. Make sure it’s not too hot. Remove the popsicles from moulds and using a spoon pour the chocolate coating all over your pops. Turn them around so that the chocolate coating covers them from all sides. Immediately sprinkle your popsicles with crushed nuts or coconut shavings.
  • Place the popsicles on the baking paper and return them in the freezer. They will be ready to serve in 20 minutes, or right after you finish your next Keto meal. 

Notes

The nutrition label is not including nuts since we don’t know which nuts you might decide to use. Here’s a quick overview of 2 tablespoons of walnuts compared to almonds:
Walnuts: Total Fat 9.2g; Total Carbohydrate 1.6g; Dietary Fiber 1.1g; Protein: 2,8 g
Almonds: Total Fat 5.9g; Total Carbohydrate 2.6g; Dietary Fiber 1.5g; Protein: 2.5g
