The Greek word for the pie – PITA

What if we told you that ancient Greek πίττα or πίσσα is the great grandmother to all kinds of pies and pizzas that we know and love? This stands both for etymology and the actual form of these delicious baked meals. The modern Greek word pita (πίτα) could be considered a staple of Greek cuisine. Maybe you have noticed that every Greek traditional cake is also called a pita! Think of karidopita, sokolatopita, melopita, galatopita and many more… Interestingly, the philosophy behind making a pie or even pizza is at the same time connected with decadency and the attempt to make a good meal out of leftovers. It’s the beauty of human invention in both worlds. The world of rich elites and struggling people of the ancient world. 

It all started with meat pies… Our Keto pies and pizzas cookbook starts the same way!

When we worked on the book architecture, we decided that our Keto pies and pizzas book will start with meat pies. The first pies known to humans were savoury meat pies where the crusts or pastry was used as a baking dish for meat sauce. Pretty much similar to what we call a meat pie today! The only difference e is that the original crust was not edible. It was so thick and it served as a baking dish. People were only eating the filling and throwing the crust away.

Did the Egyptians start the fame?

The foundations of pie creation can be drawn back to ancient Egypt too. The bakers who baked goods for pharaohs were adding nuts, honey and fruits to bread dough. This was a fundamental kind of baked pastry. Representations of this can be seen carved on the tomb walls of Ramses II, stationed in the Valley of the Kings in Egypt.

Europe and the Western world

Historians consider that the ancient Greeks introduced pie to the western world. However, the healthiest Keto pies and pizzas also come from Greeks! ;)! Pies from the time of our ancestors were made using a flour-water paste encased around meat, which helped to cook the meat and keep it juicy. But we need to remember that Ancient Greeks prefered emmer or barley over wheat! 

The Romans tasted this delicacy and stole the recipes when they conquered Athens. These wealthy and sophisticated Romans used different types of meat in every dish. They even ate meat for dessert which was called Secundae Mensae or in Greek επιδόρπιο (Epidorpio). According to classical documents, seafood and meat were popular ingredients in Roman pies served as desserts. The enjoyment of pie expanded throughout Europe, thanks to the Roman roads. But the Mediterranean countries kept some of their originality and rustic feeling.

How about Pizza?

Every ancient civilisation had something that could be called proto-pizza. Ancient Egyptians and Greeks surely had a type of flat pie. Romans did too! Historically, people in the Mediterranean zone strived to advance their quality of life. In particular, they knew how to create something great from plain ingredients. The origin of pizza hides a story of lower class creative people. They managed to create joyful dishes out of very poor ingredients. This is the same philosophy we use in this Keto pies and pizzas book.

But the modern version can go in two directions. It often ends up unhealthy if you use modern ingredients. On the other side, it can become a masterpiece of culinary art. It all depends on the level of your dedication to details. This also means that every pizza should have at least one Mediterranean ingredient. Our Keto Mediterranean pizza, for example,  combines sesame paste, herbs, spices, goat or sheep cheese, eggs, smoked meat, tomato paste, olive oil, garlic, sea salt, capers…
