Grilled liver salad, the advantage of Keto Mediterranean cooking

Grilled liver salad is one of those dishes that represent all the advantages of Mediterranean low-carb cooking. On so many occasions, we pointed out that our ancestors ate more internal organs than we do today! Nothing is more nourishing and they knew how to make it taste delicious! This is one of those meals you prepare in stages using just one grilling pan. You can use a regular non-stick pan and have the same results. Before we give you the recipe, here’s some more information on the benefits of this old-fashioned ingredient.

Interestingly, this food once was a valued ingredient in family cooking! However, in contemporary world, liver is losing popularity. This is a shame considering that it is a fantastic source of nutrients and essential amino acids.

Liver is rich in vitamins, minerals, protein. It contains concentrated iron that prevents anemia. Furthermore, it’s rich in zinc that contributes to strong immune system. We all know about vitamin A and B2 that participates in obtaining energy in the body. Finally, it’s abudant in beneficial vitamin B12.
With good reason, liver is menioned as medicinal food in ancient writings.

How to choose good piece

When buying liver, choose the one from grass fed lamb or veal. Nothing will give as much vitamin A than liver from a grass fed animal! Many people do not like the taste of this food, but if you learn to prepare it the right way, you might change your opinion. There is no other food that is so rich in essential nutrients in a bio-available form!

If you wonder if this food is actually healthy, here’s an interesting fact. The liver does not collect toxins! It processes, neutralises and sends them elsewhere for storage. Especially if you opt for liver from a young and grass-fed animal, you are more than safe!

You can learn to love it

If you never liked the flavour or texture, chances are you did not try the right kind. Also, if you prepare it by following this recipe, it can become your next favourite dish! The combination of grilled liver, mushrooms and arugula calls for a drop or two of vinegar, some garlic, butter and a handful of mediterranean herbs.

Ingredients

  • 400g (14 oz) lamb or veal liver

  • 100g (3,5 oz) sliced mushrooms

  • 100g (3,5 oz) arugula

  • 30g (1 oz) butter (we prefer goat butter)

  • 2 tbsp apple cider vinegar

  • 2 cloves garlic (see the mashing method)

  • 1/2 tsp cinnamon

  • 1/2 tsp oregano

  • 1 tbsp finely chopped parsley

  • 1/2 tsp rosemary powder

  • 50g celery or parsley root (optional)

  • 1 tsp sea salt

Directions

  • Pile the chopped garlic on one side of the cutting board. Tilt the knife at a 30-degree angle and drag it over the garlic. Scrape it across the surface of the board. Pile up the garlic again, sprinkle lightly with salt, and scrape again. Repeat once or twice until you get a smooth paste.
  • Cut the liver in thin slices and grill it on a grilling pan or in a non stick pan where you added 1 tsp of butter. Add mashed garlic and sea salt. cook for about 4 more minutes.
  • Remove the liver from the pan and place it in a mixing bowl.
  • Add the rest of the butter to the same pan. Now add sliced mushrooms and all the spices. Cook for about 5 minutes. Remove from the pan and mix with the liver.
  • Using a vegetable peeler create shawings from parsley or celery root. Grill them in the same pan for about 4-5 minutes.
  • Distribute arugula on 2 wide plates. Top with liver and mushrooms and add root shawings on top. Season with apple cider vinegar. Sprinkle with freshly chopped parsley leaves.

Notes

  • You can use cherry tomatoes, pickles, red horn peppers, boiled eggs or something similar for decoration
