Creamy Keto pie called “Vale ta pada”

Creamy Keto pie was born the same way Pizza has been invented thousands of years ago in ancient Egypt and Greece. Well, our “Vale ta pada” (βάλτε τα πάντα) in Greek means put everything you have! So we did! We literally used everything we had available that moment and the pita turned out tastier than Spanakopita, Manitaropita or even our Kreatomanitaropita! The secret, naturally, lays in the crust. Since we have been experimenting with various Keto flours, kinds of butter and spices, I am not being a “bluffer” when I say, Greek Goes Keto is the place to search for the tastiest Keto pie crusts! Each of our pies has a different crust, yet each of them tastes and feels better than the carby ones!

I want to talk about the recent trend of destroying the will to cook! People with zero cooking talent, usually attack those searching for recipes. Among the Keto and especially Carnivore circles on social media, there are those posting how pointless is to spend hours in the kitchen and cook or bake your meals. They promote the simplicity of cooking a steak in some butter and have some water! That’s it! Really? Is it?

They are trying to annul the beauty that was developed throughout centuries of culinary art. In fact, the desire to experiment and develop new experiences and play with our ingredients is as old as humankind. Why would you quit your passion for cooking and baking just because you are not using carbs’n’starch anymore? I understand that these are people who simply don’t have the skills or passion to cook. However, why would each of us quit this thrilling activity?

Cooking and baking is excellent for stress-relief

Did you know that there are enormous relaxation and therapeutic aspects of cooking and baking? There are numerous scientific claims concentrating on the psychological impact of hobbies on humans. And guess what, cooking and baking are the most passionate hobbies

The study, published in the Journal of Positive Psychology, claims that people who often practice various creative projects are much more relaxed and happier. This specific study followed 658 individuals for about two weeks. Furthermore, these people reported that cooking and baking made them feel more enthusiastic and less stressed!

Results of our experimentation with “Vale ta pada” pie

"Vale ta pada" Keto pie

  • 4 medium eggs free-range
  • 4 tbsp olive oil extra virgin
  • 100 g (1/2 cup) butter we used goat butter, you can use grass-fed cow's
  • 4 tbsp coconut flour
  • 4 tbsp sunflower seed flour use any keto flour of your choice if you cannot find sunflower
  • 2/3 tsp sea salt
  • 2/3 tsp black, red, white pepper mixture freshly ground
  • 1,5 tbsp psyllium powder


  • 4 tbsp melted butter
  • 4 tbsp olive oil extra virgin
  • 70 g smoked bacon (pancetta) chopped into small cubes
  • 4 cloves garlic
  • 200 g (7 oz) sliced mushrooms
  • 100 g (3,5 oz) grated aged goat cheese use any aged cheese of your choice
  • 200 g (1 cup) sour cream
  • 3 medium eggs free-ranged
  • 1 tbsp sesame seeds organic, raw or roasted
  • 1/2 tsp sea salt
  • 1 tsp red sweet paprika powder
  • 1/2 tsp turmeric
  • 1 tsp dried parsley


  • 5-6 stripes pickled red horn pepper alternatively, use fresh red bell pepper


  • For the crust, beat the eggs with olive oil and melted butter. When you get a nice emulsion, add salt, pepper, psyllium, coconut and sunflower seed flours. Work the dough with your hands.
  • Grease an 11-inch pie pan with some butter. Create a ball of dough and place it in the middle of the pan. Press with your palms and then work with your fingers to create the crust that covers the bottom and sides of the pie pan.
  • Stub the dough with a fork to prevent it from deforming and place it in the oven. bake for 10 minutes at 200ºC. 
  • In a deep frying pan, melt the butter and mix with olive oil. Saute chopped garlic in it and add the pancetta cubes and mushrooms. Stir and let the mushrooms release the liquid. Add all the spices and sesame seeds.
  • In another bowl mix the sour cream with eggs and grated goat cheese. When the mushrooms are soft and most of the liquid evaporated, set it aside and let it cool down a bit. Then mix it with sour cream and eggs mixture.
  • Pour this mixture into a half baked crust and return to the oven. Decorate with stripes of pickled red paprika. Bake for another 25 minutes at the same temperature.
  • The pie is equally delicious hot or cold so you can enjoy it even the next day!
