Waffles are the ideal solution for quick cake cravings. Especially on Keto, you will be able to prepare just about any cake in 5 minutes if you use the basic batter and a quality waffle iron. For example, you can use our Red velvet cake batter and bake wonderful dark red waffles and then top them with some mascarpone. Furthermore, you can use this chocolate cake batter and prepare delicious chocolate waffles. I would top them with Ketella and whipped cream! Ideas can be drawn from just about any Keto cake. How about Keto Lemon bread? This batter would make the most delicious waffles ready on your table in 3 minutes!
The best thing about waffles and modern waffle press devices is that it can be ready in 3-5 minutes! No need to nuke your cake and destroy all the nutrients in the hazardous Microvawe!

Waffle, a seductive cake that we know today dates back to the 13th century. But I wouldn’t be a real Greek if I didn’t dig a bit deeper into the historical facts! An archaeological artefact was found in Greece and it could be described as a version of ancient “waffle press”. You can read all about it in this great overview.
Waffles were so popular at all events, fairs and festivals throughout the Medieval time. King Charles IX of France had established a law which said that waffle sellers must be at least four feet away from each other. This way, they wouldn’t cause disturbances and conflicts among visitors. The popularity of waffles spreads to Tuscany and Burgundy, and then to the rest of Europe. Of course, with an emphasis on Belgium, wherein Liège – a type of waffle was patented by the personal cook of Prince-Bishop of Liège. This specific kind is still known as Liège Waffles.
With the immigration from Europe during wartime, waffles arrived in America. They became “inaugurated” by the third US President – Jefferson after a visit to France. President Jefferson personally brought a white waffle press to the White House. This became a prestigious treat and started a fame.
Today, waffles are mostly associated with Belgium and the two most recognizable types are Liege and Brussels. The second ones are thicker and have a larger pattern than some other kinds. Local consumers are easily distinguished from tourists because Brussels residents never put chocolate, cream, whipped cream, and similar toppings. They only add powdered sugar or nothing at all.

A quality non-stick pan or a Wafliera (Waffle iron) are much better investments than a microwave oven! The ending result will be as quick as the mug-cake and without the destruction of important nutrients!
Let’s make quick Keto Karidopita Waffles
- 3 large eggs free-range
- 2 tbsp butter grass-fed (preferably goat butter)
- 2 tbsp stevia-erythritol blend sweetener
- 1/4 tsp sea salt
- 1/2 tsp Ceylon cinnamon
- 3 tbsp ground walnuts
- 3 tbsp flaxseed meal finely ground
- 1 tbsp psyllium powder
- 4 tbsp sparkling mineral water
- 2 tbsp Keto Honey Substitute (The recipe link is in the description)
- 6 halves walnuts
- Beat the eggs with melted butter, Ceylon cinnamon, sweetener and salt. Add ground walnuts, flaxseed meal and keep mixing.
- At this point, add psyllium powder and whisk energetically. As the batter gets thicker due to the psyllium absorption, add sparkling mineral water and mix well.
- Grease the waffle iron with some coconut oil and pour the mixture. Cook the waffles on medium temperature for 3 minutes.
