Zero-carb chips that can serve as mini crepe bites? Yes, we managed and they taste and look so good that they simply have to be published for all the Keto foodies out there. Greek Goes Keto does not promote snacking between meals, so we’ll have to give them a better role.
They are so versatile! You can use them as an interesting starter or a great side dish. They can serve as a base for canape sandwiches, and they can be served aside Tzatziki, Ajvar, Skordalia or any other dip during the meal.
Zero-carb chips, how in the world is this possible?
Well, I went even further in the reduction of carbs and used quail eggs. However, you can use hen eggs and have zero point something carbs in these wonderful micro crepes. They are also Carnivore-friendly, so I can see them on a plate next to a steak or a burger of a person that doesn’t eat anything from the plant world. The ingredients will surprise you, they are as simple as they can be: Eggs, butter, sea salt!
Naturally, I played with the spices, which you can skip or try your own versions. If you will serve them as chips, have in mind that the batter needs to be salty and have a bit of garlic powder to boost the flavour. But you can also add onion powder, red paprika powder or white pepper. There are so many different ideas that come to mind right now, but I will let you be creative with them! 😉
Micronutrients are more important than we think
These micro crepes reminded me of some Ketonian’s obsession to track macros. We hear people keep downloading apps, obsessively counting carbs, protein and fat. However, if you apply KMD postulates, you will not be in danger of overeating carbs! 🙂 Your creations will contain super-micro-nutrients (vitamins, minerals, good omega fatty acids such as omega-3, omega-7 and omega-9) and moderate size of your side dish or salad will never allow you to overeat carbs. This is why these simple micro crepes, that are also zero-carb chips are a perfect example of KMD approach to cooking.
How can we make a Keto dessert out of them?
There are so many ways! You can fill them with Keto honey substitute or our instant Keto strawberry marmalade. Furthermore, Ketella is another great option. You can just sprinkle them with powdered monk fruit and cinnamon. Another great idea would be to add vanilla to the batter, or even make them chocolate micro crepes. They can be filled with mascarpone and a slice of strawberry. I would definitely fill them with something featuring sea buckthorn! 😉

4 egg whites – 12 if you use quail eggs
2 egg yolks – 4 if you use quail eggs
30g melted butter (1 oz) – preferably goat butter
1/3 tsp sea salt
- Spice mix for chips
1/2 tsp black or white pepper, freshly ground
1/2 tsp garlic or onion powder
1/2 tsp red paprika powder (mild or hot)
freshly ground sea-salt
- Spice mix for micro-crepes
1 tsp vanilla extract
1 tsp rum extract (or real rum)
1 tsp mahlepi powder
1/2 tsp Ceylon cinnamon
- Place the ingredients in a blender and blend for 2 minutes.
- Preheat a non-stick pan or electric crepe maker. If you don’t have a non-stick pan, use a little coconut oil to prevent crepes from sticking.
- Pour small doses of batter on hot pan or crepe maker surface and cook for 2 minutes from each side for crepes. Use a wooden spatula to flip them. For chips, cook them 5 minutes from each side.
- I was able to make 30 micro-crepes out of this mixture.
